Where Western ice cream is churned soft and full of air, kulfi is dense, close-textured and almost fudge-like, set solid in little conical moulds and eaten in cool, slow bites on a hot afternoon. The flavour I come back to again and again is cardamom and pistachio: floral, green, faintly resinous, over a milk base cooked down until it turns the colour of weak caramel. To some it is a chalky, too-sweet slab from the corner of a deli counter; to others it is the taste of a grandparent&amp;rsquo;s kitchen, dense and shatter-soft and impossibly moreish. I fall firmly in the second camp, and this ice cream is my argument for the defence. It takes everything I love about sesame halva, its toasted-tahini depth and faint bitterness, and folds it into a cold, creamy base that mellows the sweetness and lets the sesame sing. The swirl of salted tahini caramel running through it is the small twist that turns a nice ice cream into one people ask for by name.&lt;/p&gt;</description><pubDate>Sat, 20 Jan 2024 13:15:00 +0000</pubDate></item></channel></rss>
