It is a dark, dense chocolate cake, split and sealed with tart apricot jam, and poured over with a glossy chocolate glaze that sets to a smooth, faintly crisp shell. In Vienna it is served in a slab with a mound of unsweetened whipped cream on the side, and no fork ever leaves the plate disappointed.
