Flammkuchen

Tarte flambee

Flammkuchen is also known as Tarte flambée 

What you need

Utensils

Ingredients

  • 3 dl water

  • 2 tbsp. olive oil

  • 200 flour

  • 200 g tipo 00 flour

  • 10 grams of yeast

  • 1,5 tsp. salt

Fyld

  • 3 dl sour cream

  • kosher Salt

  • Freshly ground black pepper

  • A dash of freshly-squeezed nutmeg

  • 300 g smoked bacon,in thin strips

  • 2 red onions,

What you need to do

Dough

  • Mix the flours and the salt

  • Mix the water, olive oil and yeast

  • Add the wet mixture to the dry mixture and knead thoroughly for at least 10 minutes

  • Let the dough rest and rise for an hour.

  • Roll the dough very thinly, into two or four slates.

Filling

  • Add some salt, pepper and a bit of the nutmeg to the sour cream.

  • Cut the red onions into very thin slices

Baking

  • Turn on the oven at 250 (c) / 480 (f)

  • Add a thin layer of  sour  cream  on the dough

  • Add some bacon and onion on top

  • Bake for 10 minutes or until the Flammkuche is crisp.

Serve smoking hot.
